Ingredients

  • 350g gluten-free pasta
  • 300g yellow cherry tomatoes
  • 200g stracciatella cheese
  • 50g bottarga
  • 2 cloves garlic
  • Extra virgin olive oil
  • Salt and pepper to taste
  • Fresh basil leaves

Instructions

  1. Preheat the oven to 200°C (390°F). Halve 150g of the yellow cherry tomatoes and place them on a baking sheet. Drizzle with olive oil, salt, and pepper, then roast for 15 minutes.
  2. In a large skillet, heat olive oil and sauté minced garlic until golden. Add the remaining halved cherry tomatoes and cook until soft.
  3. Cook the gluten-free pasta according to package instructions. Drain and reserve some pasta water.
  4. Add the roasted tomatoes to the skillet and mix with the sautéed tomatoes. Add a bit of pasta water to create a sauce.
  5. Toss the cooked pasta with the tomato sauce. Add more pasta water if needed for desired consistency.
  6. Serve the pasta topped with dollops of stracciatella, grated bottarga, and fresh basil leaves.
