Ingredients

  • 1 kg potatoes
  • 200 ml plant-based milk
  • 50 g nutritional yeast
  • 200 g mixed mushrooms
  • 100 g peas
  • 50 g sun-dried tomatoes
  • 1 leek
  • 150 g vegan cheese
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat your oven to 180°C (356°F).
  2. Boil the potatoes until tender, then mash them with plant-based milk and nutritional yeast. Season with salt and pepper.
  3. In a pan, sauté the leeks, mushrooms, peas, and sun-dried tomatoes in olive oil until softened.
  4. In a baking dish, layer half of the mashed potatoes, add the vegetable mixture, and top with vegan cheese.
  5. Cover with the remaining mashed potatoes and a drizzle of olive oil.
  6. Bake for 30 minutes until golden.
