Ingredients

  • Pumpkin: 500g
  • Amaretti cookies: 100g
  • Mostarda: 50g
  • Lemon zest: 1 lemon
  • Flour: 300g
  • Eggs: 3
  • Butter: 100g
  • Sage leaves: 10
  • Grated cheese: 100g
  • Salt and pepper to taste

Instructions

  1. Prepare the filling by cooking the pumpkin until soft. Mash it and mix with crushed amaretti, mustard, and lemon zest. Season with salt and pepper.
  2. Make the pasta dough by mixing flour and eggs until smooth. Roll it out thinly.
  3. Cut the dough into squares and place a spoonful of filling in the center of each square. Fold and seal the edges to form tortelli.
  4. Boil the tortelli in salted water until they float to the top.
  5. In a pan, melt butter and add sage leaves. Toss the cooked tortelli in the butter and sage sauce.
  6. Serve hot, sprinkled with grated cheese.
